My secret ingredient in a lot of my dishes. Just a little bit makes the dish pop. Add a touch – literally just a tiny sprinkle to tomatoes, mushrooms, broccoli, cheese sauces, soups, ground beef, etc and it will helps bring out their natural umami.
The idea that MSG can cause negative effects originated with a letter (not peer-reviewed research) to a journal about “Chinese restaurant syndrome.” The idea likely stayed alive by a combination of the placebo effect and mild fears about cuisines seen as “foreign” (at least in the US). The man who wrote the letter to the New England Journal of medicine in 1968 theorized multiple causes of “Chinese Restaurant Syndrome” including excess salt and cooking wine. People just happened to latch onto MSG as the culprit, and flawed research originally backed it up.
The same man later in life admitted that the letter itself was actually something he made up as a part of a bet with his friend that he would never get published in a medical journal. Basically the entire thing is a joke and MSG is no worse than salt.

Another underrated ingredient is Fish Sauce. Add it to spaghetti sauce. It adds both extra umami and salt. I never taste the fishiness. It takes my spaghetti sauce from acidic to something more rounded out and savory.
